- remove crusts and dry the bread in a low oven (300), increase to high when done
- peel and smash garlic
- cube bread and crumb in blender, add garlic, thyme and lemon, blend some more
- mix oil into crumbs
- salt and pepper the fish, press a layer of crumbs on top
- bake at 425-450 until done (20-25) min
